摘要 |
提供盒裝富氣泡的豆腐之製造方法,係將適當濃度(11○BriX以上)已過濾並經適當加熱再冷卻至10℃之豆漿,加入添加有0.3%(w/w)葡萄糖酸-δ-內酯,再配合添加適量之小蘇打或泡打粉,混合均勻後裝入適當容器內密封靜置,於靜置時,再將豆漿加熱至80℃,維持30min,於此加熱過程中,利用泡打粉產生二氧化碳氣泡,或由葡萄糖酸-δ-內酯受熱產生葡萄糖酸,此酸再與小蘇打作用,產生二氧化碳氣泡,另一方面此酸促使大豆蛋白凝結,凝結之大豆蛋白同時將二氧化碳氣泡包住,製成富含氣泡之盒裝氣泡豆腐。 |
